TOMATO SOUP

Makes 4 cups

 

Make this in the summer when the tomatoes are the sweetest-it’s clear, light, and elegant.

 

  • ½ lbs fresh ripe tomatoes
  • 2 carrots, sliced
  • 3 stalks celery, chopped
  • 1 onion, chopped
  • green pepper, chopped
  • 3 whole cloves
  • 1 tbsp lemon juice
  • salt and pepper

 

Coarsely chop the tomatoes & put them in a soup pan with  2 cups water. Add carrots, celery, onion, green pepper, & cloves. Bring to a boil, reduce heat, & simmer for 20 minutes. Strain. Add lemon juice & salt & pepper to taste Very few delicious calories. Add a generous topping of RR0 Sour cream before serving
