    Restaurant-style wings seem difficult to pull off at home, but the technique is surprisingly simple. A bold spice marinade, a light flour coating, and a double fry in good oil is all it takes. No special equipment, no complicated steps, just a heavy pot, a thermometer, and about thirty minutes of your time.

    Why the Double-Fry Method Works for Wings

    A single fry gives you crispy wings that lose their crunch within minutes. The double-fry method solves this. The first round at moderate heat cooks the chicken through. After a brief rest, the second round at higher heat builds a shattering, golden crust that holds up long after the wings leave the oil.

    The resting period between fries is what makes the difference. It allows the moisture inside the meat to redistribute, so the second fry crisps the outside without drying the inside.

    Chicken Wings

    • Use whole wings separated at the joint into drumettes and flats, with the wing tips removed.Β 
    • Pat them completely dry with a kitchen towel before marinating.Β

    The Marinade

    The Coating

    A light, crisp coating works better than a heavy batter on wings:

    • Mix equal parts rice flour and cornflour with a tablespoon of plain flour, a pinch of salt, and a dusting of black pepper
    • Add this dry mixture directly to the marinated wings and toss until each piece is evenly coated

    The Oil

    Wings need a stable, neutral oil that holds its temperature through multiple batches.Β

    How to Fry Crispy Chicken Wings at Home

    Two rounds in the oil, with a rest in between. That is the whole technique.

    Step 1: First Fry

    • Pour Refined Groundnut Oil into a heavy-bottomed pot to a depth of about 7 to 8 cm.Β 
    • Heat to 160 degrees Celsius. Working in batches of four or five, gently lower the coated wings into the oil. Fry for five minutes, turning once.Β 
    • The wings will be cooked through but still pale.
    • Remove with a slotted spoon and place on a wire rack.Β 
    • Do not use paper towels for this stage; the rack allows air to circulate and keeps the coating from going soft. Let the wings rest for ten minutes.

    Step 2: Second Fry

    • Raise the oil temperature to 190 degrees Celsius.Β 
    • Return the wings to the oil in batches and fry for three to four minutes until deep golden brown and audibly crisp.Β 
    • Remove, drain briefly, and season with a light sprinkle of salt or chaat masala while still hot.

    Dipping Sauces Worth Making

    Spicy chicken wings pair beautifully with cool, creamy dips:

    • Warm Nacho Cheese sauce for a rich, indulgent dip that children and adults both reach for
    • A quick ranch-style dip: mix Sour Cream with dried dill, garlic powder, and a pinch of salt
    • A spicy cream cheese spread: blend Cream Cheese with finely chopped green chillies and a squeeze of lime
