Ingredients:
For Fried Feta
- 400g #RRO Feta Cheese cut into thick slabs
- 60ml #RRO Primio Refined Groundnut Oil
- 30g Fresh Bread Crumbs
- 2 eggs beaten
- Lemon zest from 1 lemon
- 200g Cherry Tomatoes halved
- 1/4 cup Fresh Basil chopped
- Pita Chips or Pita Bread triangles for serving
For Pepper Honey
- 60ml Honey
- 1 tsp. Black Pepper freshly ground (or to taste)
- 1 tbsp. Fresh Thyme leaves plus more for serving
Instructions:
- To make the pepper honey, combine all ingredients in glass jar.
- To make the feta, whisk the egg in a shallow bowl. Place the bread crumbs in a separate shallow bowl.
- Dip each feta piece through the egg, turning to coat thoroughly, remove and allow any excess to drip off. Dredge the feta through the bread crumbs, turning to coat and pressing gently for the crumbs to adhere.
- Heat 4 tbsp. oil in a frying pan set over medium heat. When the oil is heated, add the the lemon zest and tomato halves, fry for 30 seconds to 1 minute, remove from the pan and keep aside. To the same pan, add the feta pieces and fry for 2 to 3 minutes per side, until golden brown and crisp. Transfer the feta to a serving plate.
- Serve the feta warm, drizzled with honey and topped with fried lemon zest, thyme and tomatoes accompanied with fried or toasted pita chips.
