ROOHI’S RECIPE – PORRIDGE WITH HONEY, BANANAS AND YOGURT

Serves four

Ingredients:

  • 50g Express Foods Harvest Crunch Jumbo White Oats
  • 50g Express Foods Harvest Crunch Quick Cooking White Oats
  • ½ tsp. table salt
  • 1 tsp. ground cinnamon
  • 250ml semi skimmed milk or almond milk or coconut milk
  • 250ml water
  • 1 tbsp. RRO Unsalted White Butter
  • 2 very ripe bananas, each cut into 6 slices
  • 8 tbsp. honey
  • 300g thick yogurt, to serve
  1.  Place the oats, salt, cinnamon, milk and water in a medium-size saucepan over low to moderate heat.  Stir regularly for 5 to 10 minutes.
  2. Heat the butter in a medium-size frying pan over high heat, add the banana slices and brown them slightly on each side.
  3. Add honey,  then remove from heat.
  4. When the oats are cooked and have soaked up most of the liquid, divide the porridge between four serving bowls.
  5. Place three slices of banana and a large dollop of yogurt on each.
  6. Serve immediately.
